Description

Carballal Cepas Vellas 2019; This winery was rebuilt in 2001 and has recently been renovated to adapt more and more to the needs of the winemaking process and to the comforts of the visitor.

Selection of the fruit when entering the winery are immediately destemmed (separation of the grapes from the cluster) and then squeezed by pneumatic pressing at low pressure.

Then it’s time for static settling. At this stage, the must remains 48 hours of rest in vats so that, by natural precipitation, it reaches perfectly pure the alcoholic fermentation container at 20o Celsius. It is then that malolactic fermentation arrives, in which the wine is rounded and becomes more complex. At the end of the process they let the fine lees interact in the wine for months to manage to print another point more personality and finesse.

Finally the wine is carefully bottled, labeled and stored for distribution and subsequent enjoyment.
