Description
Queso Curado San Simón , with Protected Designation of Origin , is an artisan cheese produced with Galician blonde, Alpine brown and Friesian cow’s milk. It is semi-cured of pressed paste and follows a drying process of a minimum of 30 days, and then smoked with birch wood.
This artisanal production process gives it a mild flavor with very pronounced smoky nuances. Subsequently it is stored for maturation, for a time of not less than 45 days.
