Palo Santo cheese; Practically unknown in the rest of Spain, the Palo Santo it’s a cheese made with cow’s milk; soft-tasting, very buttery and melting very well. Its name is due to the instrument used by a monk from a monastery near Cuntis (Pontevedra), back in 1,720, to remove the curd from which he obtained a fatty cheese of exquisite flavor, after rest of 3 months in the cellars of the convent.

Thanks to the researchers who searched the old documents of the Monastery those who got the formula. Today its production is as traditional as in the eighteenth century.
