Description
Záte Caíño Tinto 2018; Caíño Tinto (vitis vinifera) is one of the 3 native red varieties of the Salnés Valley, a variety of sprouting and late maturation, producing medium-toned fruit wines and high acidity. It has a nice bright cherry colour.
Harvest, is manual and on the plot a selection of grapes is made. The grapes are stepped on without destemming in an open oak vat, where fermentation takes place, once finished, a daily pigeage is carried out for 4 weeks. With this long fermentation-maceration an infusion of the grapes in the wine is sought to extract color and aromas.
