Description
Pazo de Baión Vides de Fontán 2016; Harvest: Exhaustive ripening control. Manual harvesting of grapes during the coldest hours to maintain aromatic potential. Choice of smaller bunches with a very golden hue.
Maceration: At a temperature of 6oC for 8 hours. Fermentation: Native yeasts. Temperature control between 14o and 16o C. and subsequent fermentation in 2 French oak vats of 2500 Liters each.
Later I transfer to stainless steel vat, for later aging in concrete egg and one more year in bottle.
The walls of Pazo Baión keep behind them the history of the most important noble families of Galicia. Founded in the fifteenth century by the Sarmiento, Pazo Baión would host some of the most prominent lineages such as the Figueroa, the Camba or the Soutomaior.
Among its centuries of history there is also talk of Galician emigration by don Adolfo Fojo, a wealthy returned migrant from Argentina, who bought the property and carried out in it the greatest reform of the old pazo, giving him the architectural structure he currently possesses with the two Victorian towers. It would also send the construction of a deer and a warehouse. Finally, after passing through different owners, on July 16, 2008, Pazo Baión was acquired by Adegas Condes de Albarei, who undertakes an architectural and landscape reform on the estate under the baton of the Galician architect César Portela, National Architecture Award, thanks to which this jewel of artistic and cultural heritage revives its goldenest era.

- Bright yellow with greenish reflections.
- Outstanding varietal character, with the presence of aromas of white flowers (orange blossom and jasmine), stone fruit and citrus, with integrated toasted and spicy notes.
- In the mouth it is fresh and balanced, with a good structure, fatty, enveloping, mineral and long development in the mouth, with a persistent finish very aromatic that combines the notes of aging with varietals.
