Fonte do Frade Toasted Liqueur; Liquor made with a base of pomace brandy from Galician varietals, which is macerated with sugar caramel, brandy and a botanical for greater homogenization. Soft and quite dry.
Bodegas Pazo de Valdomiño submits this meticulous elaboration process, which begins every September, with the careful selection of Bagasse, coming exclusively from wineries covered by the Designation of Origin Rías Baixas, being 85% bagasse from Albariño and another 15% remaining from other native varieties such as Albariño, Loureiro, Treixadura, Caíño Blanco, Lado, etc.
After this harvest, the natural fermentation process takes place that transforms the sugars into alcohol and whose duration is around twenty days.
Once fermenting, we begin the distillation itself (which can be double or triple), through an advanced Steam Drag System.
In the second distillation we will separate the different vapors depending on their degree of quality. The next phase is the one that produces the hearts and is destined to the elaboration of our spirits.
