Guímaro Finca Meixeman Mencía 2018; Coming from a farm that occupies just over a hectare – called Meixeman, just like wine – and from vineyards of 70 years – in the case of the Mencia-, the grape of Guímaro Finca Meixeman is born in strains facing southwest and grows on slate soils that are located between 400 and 450 meters above sea level.

The harvest of the grains is carried out using small boxes. In this way, damage to the harvest is avoided during the transport of the same to the facilities of the winery. Winemaking begins with a fermentation phase in closed troncoconic tanks in which 60% of the grapes are worked whole and the remaining 40% is worked with scrape. This process takes between one and two months. The must obtained from which Guímaro Finca Meixeman will be born is then bled and gently pressed.

Guímaro Finca Meixeman rests for a year in French oak barrels of up to 500 kilos capacity before carrying out the final malolactic fermentation. Before being bottled, without clarification or filtration phase, the wine is transferred to a deposit, where it rests for two more months. Ultimately it just tuned another three months in the same bottle.

Guímaro is a small Galician winery faithful to the wine tradition of the area. La Mencía, but also various types of native grapes, are part of the repertoire of the project.
