Guímaro Finca Meixeman Mencía 2017; Coming from a farm that occupies little more than one hectare-called Meixeman, like the wine-and of vines of 70 years-in the case of the Mencía-, the grape of Guímaro Finca Meixeman is born in strains oriented towards the southwest and grows on slate soils that are located between 400 and 450 meters above sea level.

The harvest of the grains is made using small boxes. It is thus avoided to damage the harvest during transport to the winery’s facilities. Vinification begins with a fermentation phase in closed tapered deposits in which the 60 of the grape is worked whole and the remaining 40 is done with scratch. This process lasts between one and two months. The must obtained from which will be born Guímaro Finca Meixeman is then bled and pressed gently.

Guímaro Finca Meixeman rests for one year in French oak barrels of up to 500 kilos of capacity before the final malolactic fermentation is carried out. Before being bottled, without phase of clarification or filtration, the wine is transferred to deposit, where it rests two months. Ultimately just tuned another three months in the same bottle.

Guímaro is a small Galician winery faithful to the wine tradition of the area. Mencía, but also various types of autochthonous grape, are part of the repertoire of the project.
