Don Pedro de Soutomaior Neve Carbónica. Carbonic snow is like dry ice and with it you can lower the temperature instantly to about -4 or -5oC. It is used to make a kind of cryomaeration at very low temperature. This breaks the internal cells of the skins and allows more aromas to be extracted.

Description

Don Pedro de Soutomaior Neve carbonica 2019, (Carbonic Snow), is born from the vineyards of the County where the balance between freshness and maturation is perfect.

In the winery, after passing through the rigorous selection table, macerate with carbonic snow for 12 hours at -4oC in order to obtain the greatest aromatic potential of the skin of the grapes.

Tasting….

  • Straw yellow with lemon reflections, it is clean, bright and with a slight bubble that shows its youth.
  • It stands out for the aromas of hair fruits, lime, pineapple and white flowers. It is spacious, unctuous, enveloping and long.
  • On the palate it is broad and aromatic, unctuous, with fruity load, fresh and balanced, long fruity persistence. Cleans retro-nasally where pleasant bitter notes appear.
