Description
Brut Sparkling Dance; The grapes are harvested manually and sorted on selection tables, then destemmed and gently pressed with cold maceration. Fermentation takes place in stainless steel vats, at a temperature mechanically regulated by a prudential space of time. It is left to rest for 21 months on its own lees. In the end, it is clarified, filtered and bottled for final refinement, a few months before going on the market.
