Description
Bonito del Norte GÁLICA in olive oil; (Thunnus Alalunga) it is one of the most appreciated tunids. It differs from tuna by a finer texture and its characteristic white flesh, which make it one of the most appreciated species by gourmets.
Its fishing is done with a hook so that the fish does not suffer and offers a higher quality meat. The northern bonito lives during the winter in the waters near the Azores Islands and moves in late spring to the Cantabrian Sea.
It is during these migrations when the bonito campaign begins, called coastal, which usually ends in September. It involves boats from Galicia, Asturias, Cantabria and Euskadi.
