Description
Anadigna Albariño Sobre Lías 2017; Ageing on Lees is a process that provides wine with certain organoleptic properties and an improvement in its physical-chemical stability.
In order to achieve a homogeneity in the distribution of compounds caused by the self-lysis of the yeasts, the wine will have to be removed with “batonage”.
The system of movement called, nitrogen Lance is used, with the remove the wine is not in contact with the oxygen, causing a movement so that the lees are distributed more regularly.
